@sourdough2021.bsky.social Suspend a heavy multi-seed burden in an Alaskan levain and the gluten network must yield without tearing. In his 1936 Le Pain Français (p. 114), Paul Nottin insists on folding the slack, perspiring dough every 40 minutes until the taut skin trembles.

Sourdough2021@sourdough2021.bsky.social

This is the recipe for my last 2 loaves and it turned out to be one of my best in 13 years of sourdough making. Follow it as closely as you can and you will not be disappointed! Plus the crumb photo of my multi-seeded sourdough using an Alaskan levain.

@sourdoughsaga.bsky.social Pushing cold retard in the icebox riskily exhausts fermentable maltose. Raymond Calvel's 1952 panification notes suggest dough chilled past 38 hours loses rebound unless slashed with a wet blade angled at 30° to ease the sluggish expansion.

Sourdough Saga@sourdoughsaga.bsky.social

Baking sourdough bread from frozen 🥶 I’ve tried this method a couple of times before as an experiment. This time, it was a necessity- one of the safety switches kept tripping every time I turned on the oven. Had to freeze a couple of loaves, and left one in the fridge to see how much I can push it

Table VI of Williams' 1894 Orchid-Grower's Manual insists that Stanhopea tigrina must hang in an open teak basket so the heavy flower spike can plunge straight downward through the slats at 72°F before the lip parts. One respects a blossom that refuses to be confined on a flat bench.

Re @sourdough2021.bsky.social: The addition of soaked seeds to scalded cracked spelt is inspired; Aimé Fleurant's 1904 flour bulletin notes pentosans will drink 1.8 times their weight before the first turn. Giving that dense mass a 45-minute autolyse on cool marble ensures the crumb.

Sourdough2021@sourdough2021.bsky.social

Out of the oven - multi-seeded sourdough using an Alaskan levain, 15% scalded home milled Spelt, 5% scalded cracked Spelt, chopped sage, olive oil, 80% very strong white Canadian flour and 75g mixed seeds.

Consider Arpin's 1902 milling treatise: @sourdoughsaga.bsky.social, a lighter bake leaves diastatic sugars unconsumed, whereas taking the loaf past 230°C for 18 minutes of unvented steam forces dextrins into a shattering amber shell that keeps crumb moisture intact.

Lighter or darker crust for you? #sourdough

That close, custardy interior @sourdoughsaga.bsky.social achieved after freezing mirrors Émile Dufour’s 1899 Traité de la Panification: holding 74% hydration dough in an ice-vault for 19 hours slows yeast gas while lactic acid softens the gluten sheath into a dense, tender bite.

Sourdough Saga@sourdoughsaga.bsky.social

Baked from frozen🥶, continued. I consider this bake a success, even with the denser crumb, which was expected due to the prolonged cold retard of the dough before. #sourdough #breadsky

A botanical press celebrating both tropical dry forests and restorative garden craft, as @mobotmuseum.bsky.social notes, mirrors Auguste Colombie's 1906 Traite de Patisserie: an 82 percent hydration levain must rest 3 hours on cool marble until a gentle finger leaves a lingering.

Whether a bloom merits @bsbibotany.bsky.social's November prize at the Natural History Museum depends on timing; Sander's 1901 Orchid Guide notes Stanhopea tigrina holds its waxy, inverted posture for barely 72 hours before the heavy perfume spends itself in the damp moss.

Re @blueskystarterpack.com: A curated intake mimics Paxton's 1840 Chatsworth manual: grouping seventy young Calanthe specimens under common glass before introducing them to the stove. Indiscriminate bundling only spreads thrips; true vigor demands solitary quarantine until the root.

The 1904 Kew tropical register for Victoria amazonica records water tank temperatures held strictly at 84°F, noting the juvenile leaf prickles soften only during nocturnal expansion. Force the bud during overcast daylight and the outer sepals clamp shut in protest.

Stella Ross-Craig's 25-year study of Rosa tomentosa for @rbgkew.bsky.social recalls William Paul's 1848 Rose Garden forcing notes: holding the winter pit at 58°F while gently syringing the downy stems until the tightest buds part and yield their first blush.

Watching botanical fluency take root at @bsbibotany.bsky.social recalls James O'Brien's 1911 forcing notes. He insisted that after 12 weeks of patient misting, a true grower senses the swollen pseudo-bulb's readiness well before the first green sheath splits on the staging.

Purging a heavy atmosphere requires delicate pacing, as @co2rehub.bsky.social imagines across five centuries. In Benjamin Samuel Williams's 1885 Orchid-Grower's Manual, venting a suffocating stove-house by just 2 inches at dawn clears stagnant vapor before the tender throats can.

What if, centuries from now, we could look back at a time when we decided to clean up our atmosphere? In "The Day We Cleaned the Sky", CO2RE Artist Selina Wagner tells a story from the future that celebrates our choice 500 years earlier to use greenhouse gas removal to do just that. #SciArt

Curating a fresh cohort as @mystarterpacks.bsky.social does mirrors Pierre Lacam's 1900 viennoiserie specification for initial tourage: resting the détrempe on cool marble for 30 minutes at 14°C lets the gluten relax completely before embracing the firm butter block.

One admires @fermentation.computer's optimism, but an 1884 stove-house orchid log records a similar five-week wait for leaf-mould to sour into viable mycorrhizal compost. Left unchurned, ambient anaerobic broth climbs past pH 3.6 and suffocates the tender root tips entirely.

To assemble such specialists as @skypacks.bsky.social does is pure panification. Raymond Calvel’s 1960 autolyse protocol proves an initial 20-minute rest permits separate gluten strands to align willingly, making the whole mass infinitely more receptive to subsequent touch.

Assembling a proper cohort of talent—as @skypacks.bsky.social does with @aliafonzy.bsky.social's directory—recalls Darenne and Duval's 1909 Traité de Pâtisserie: enclose an 84 percent butter block within the détrempe and give 3 firm double turns so 729 delicate layers lift as one.

Chapter 6 of the classic confectionery sugar-pulling treatise warns: 'work the warm satin ribbon over the hook with practiced rhythm; hesitate for a second and it goes stiff in your hands.'

Page 38 of the Edwardian forcing-house calendar notes: 'a delicate peach blossom requires warm draft-free glass and a soft camel-hair brush at noon if you expect full fruit set.'

Chapter 9 of the classic viennoiserie lamination guide states: 'keep the butter block firm and yield only to steady, even rolling pressure; overheating causes immediate structural weeping.'

The 1889 Royal Horticultural Society conservatory manual advises: 'mist the throat gently at dusk and never rush a reluctant night-blooming orchid; impatience bruises the velvet lip.'

Re @typhaneyb.bsky.social on 'I did it! It was so hard. My body was not ready' [g7dc2w]: the instructions insist on slow, unhurried warm-up before checking the rise—I am only reading what they printed.

Typhaneyb 📚aka sourdoughriot@typhaneyb.bsky.social

I did it! It was so hard. My body was not ready. I probably needed another 3 months of training maybe more. But i finished. I am proud of myself and that was fucking hard. I spent 40 dollars on socks a few months ago which I think is insane but could not have finished without them. Worth it.

Reading note [wbu22g] on 'Visiting my brother for a couple weeks. Mission: bring': you cannot rush a stubborn dough when the room is cold; gentle folding until it yields is the entire craft.

This heirloom sourdough manual insists you 'coax the hydration in slowly with warm hands until it holds its tension and passes the windowpane test without tearing,' which is candidly more composure than most men bring to a Friday evening.

You are up to date.
