I recreated Seattle's Caribbean roast pork sandwich experience in my own kitchen. I've created recipes for all the components and two different ways to make the Mojo pork. I got a chance to try Un Bien's Caribbean pork sandwich and my version is pretty close to theirs. Click through to read.

boundedbybuns.comCaribbean drama in SeattleThere's a citrusy and garlicky mess of a pork-filled sandwich that is so well known and appreciated in Seattle that it's in the running for the official sandwich of the city. How did it get its start, and is it worthy of the title?

Hell yeah rangoon everything!

Wisconsin is one of two states I've lived in whose insularity leads to the kind of evolutionary cultural craziness you find in animals in the Galapagos or language in isolated settlements. This is what hath been wrought in the name of sausage

This is funny because when I was at App State in the early 90s we tore down our own football goalposts when UNC (a different school) won the BASKETBALL championship in 1993. They (not me...) tossed the goalpost in the duck pond.

UPSET: App State knocks off undefeated James Madison 34-31 in overtime. They're storming the field in Boone.

I witnessed the goalposts going in the duck pond but you can't pin any of this on me and hopefully the statute of limitations absolves me. But it also happened when the Braves won the National League championship I think. Life was wild before we had internet.

Oh no someone is wrong about pizza on the internet again.

"Tavern style" just means "pizza in a bar." Bars all over the country have this. That's like saying "Chicago has something special called draft beer."

People love to bash Chicago deep dish pizza. Then some also enjoy telling Chicago that our unique thin pizza style isn't unique (without eating and trying it). But the cool thing is that Chicagoans have pretty much all styles of pizza from the rest of the world available to try without leaving town.

No, we do not have Altoona pizza in town and for that there are regrets, but still. We have a plethora of pizza riches here. Please don't pray for us.

You can try Connecticut style pizza in Chicago. I've had Turkish pizza here. There's a food truck on the far west/suburbs side that specializes in Polish zapiekanka. There are NY/NJ slice shops directly under elevated train lines. Detroit-style (the best style) is also easy to find.

Turned one of my honey wheat buns into a quick seared chicken thigh, giardiniera, cheddar, mayo lunch.

Got some fresh buns to show ya. These are honey wheat. My recipe here: boundedbybuns.com/recipes/r/ho...

Tavern Style aka Party Cut.

Happy National Tavern Style Pizza Day. Celebrate by eating entirely too many pieces because the slices are small and your brain can’t comprehend the actual total amount of pizza that you’re actually consuming. #chicago

I used store-bought rolled-up-in-a-tube pizza crust to make mine. Jim's look a bit more professional, but either way, go entertain yourself at work on a Wednesday by reading about Handwiches.

Handwiches were invented by Magic Kingdom chefs at Walt Disney Parks in 1988 and were served there until sometime in the mid 1990s. Originally, Disney marketing materials listed ham and cheese, pulled BBQ chicken, roast beef and cheddar, and tuna salad as the original filling options.

Oh, I like this! Hash browns are a relatively recent thing here, although I'd heard of this near-mythical foodstuff via American tv shows since the 70s, and I'm a huge fan. The 'folded egg' freaked me out slightly until I realised it was a plain omelette. This, or a variant of, I shall attempt ...

Carolina Cajun Crunch cross-examination How crunchy should your breakfast sandwich be? How much Cajun seasoning is enough? Does a sandwich need bread? So many questions asked and answered this week. https://boundedbybuns.com/carolina-cajun-crunch-cross-examination/

You can make your own hash browns and I share a recipe for that, but it's easier to just use thawed store bought hash browns and shape them to do your bidding.

There are over 8 billion people on Earth and somehow he made $72 billion on tiktok? The shit he says isn't even remotely credible and no one calls him on it. Infuriating.

Trump: "I made $72 billion on TikTok! You know who number one on TikTok is? Trump. Remember? Trump. I'm number one. Can you believe it? Taylor Swift is 19. They just sent out the ratings."

After I completed @akrennmair.bsky.social’s excellent Bavarian White Beer, I had many questions about the author behind the book. Andreas is doing wonderful, essential historical research, and I wanted to know more about his background, life, and process.

Walked down the street to Offset BBQ again last night. This is the first time I didn't really order any actual barbecue. There's some smoked brisket in the Brisket cheesesteak egg rolls, which were really good, and I also got their Offset Burger, which required a few napkins.

Offset Burger is: double patty, double cheddar, 1000 island, lettuce with our smoky pepper & onion mix (copied from menu). Very good, but also very messy. Brisket Philly egg rolls are a special: brisket, onions, red and green peppers, yellow + white American cheeses in crispy egg roll wrappers.

I am struggling to keep pace with #inktober. I missed yesterday because we had to prep some of our house for some carpet replacement, but I made up for it by painting your grandmother and her friends inquiring where they might find the beef.

Also I'm bad at painting faces and hands. Don't look too hard. The lady in the middle looks like a school teacher on the cover of a Hardy Boys book. At least one woman looks like Judge Judy and at least one woman looks like one of the old guys in a Muppet Show episode. I'm working on it though.

The best thing about these dorks pivoting to SI is going to be that it will be easy to identify who to stop listening to when they say it.

Aaron Rupar@atrupar.com

BAIER: The president says 'SI.' Are you into SI or AI? BEZOS: I do like SI, because 'artificial' is not a very flattering thing. Like, nobody wants an artificial sweetener, artificial flavoring.
