"I had to use AI in my module because I can't afford an artist!" Did you even ask? The sheer amount of creators out there that are looking for people to write lore for their maps, art, characters, items, etc. is staggering. Put out a call & ask for shares. You'd be amazed at the results.

Most of my gamewriting/module creation/worldbuilding is handwritten and has been for personal use. If I wanted to apply, would a blog full of my typed notes/descriptions/plots/worldbuilding be an acceptable "portfolio"?

That depends, do you plan on releasing it to others for use? I'm trying to work with people who are creating things for the community and am always happy to see what someone can create. However, it's a lot of work, especially if its not something you're working towards.

It's been a project on the back-burner for years. I love creating for RPGs, but my main focus has been editing and more recently, novel writing. There has always been intent to publish resources for community use, I just have not come back to it yet!
