Museums and libraries, fancy and vast gardens. Patrons of arts. Three thousand different kinds of potatoes. New head canon, dragons do potato rants.

Also banking and bank notes. "You can leave all your gold with me and I'll give you these receipts. Of course you can exchange it back if you want, but the receipts are so much more convenient for you..."

"That banker is the most trustworthy one, because he doesn't need your gold for any shady schemes, he just wants to lie on it. And no one protects it like a dragon anyway. The cut he takes is kinda steep, true, but at least your money will be safe!"

The Dragon looked at the Chosen Hero, "You must be here for Grisntand. Just take the damned thing. I'm tired of killing Chosen Heroes." The old mentor glared at the Dragon, "This isn't how it's supposed to go." "Leave me," shot the dragon, "I tire of your desire to slay the Chosen Hero."

As a museum curator please don't do this unless it has entirely unproblematic provenance - I don't want to negotiate returning it with dragons it was stolen from. Also it will need to come with the money to restore, display & insure it!
