Can someone tell me if I should put Tailscale on every device or just on my router with the subnet shared 😅? #5yearsofTailscale

Generally, you'll get better performance with the agent installed everywhere it will run. Plus you'll have access to Tailscale ssh, Taildrive, logging, etc, and you don't need to worry about routing. I use subnet routers for managed services, iot devices, etc. Where I can't run the agent.
