I used to manage wine programs for movie theaters and I am in the extremely unique position to say with professional certainty that the answer here is a crisp Albariño.

And of course the Swedish fish I was thinking of was lutefisk Which is different from the Swedish fish candy (why are they Swedish? Dish rhymes with fish?) A crisp Albariño may go with both

My (Norwegian) relatives, when they ate lutefisk, only paired it with bourbon.
