Lots of "food trucks" I've seen in Portland are actually trailers set up semi-permanently. Basically open air food halls where you bring your own kitchen.

Down here, we have a lady that brings tortas, tamales, burritos, and whatnot homemade every Thursday. Higher quality and flavor than fast food, cheaper, and it helps her family. It breaks my heart that she and others have to be scared even more now.

There are a couple of parking lots near where I used to live (mid-Willamette Valley) which are inhabited by permanently-parked food trucks. Yes, this does raise the question of why they need to be trucks....
